Coffee Cake Muffins

morning....here's the thing about me, when I wake up in the middle of the night or earlier than usual, I bake. It's strange, I don't know why I do it. But I digress. I got up, and started baking. I didn't have enough ingredients to make the full cake, I improvised. I thought I will make half the batter, full topping and layer the topping in the batter and make big muffins. Well let me just tell you! BIG muffins....more like BIG mistake! I should've known better. The topping for this coffee cake is very melty. Before they went in the oven they looked amazing. I couldn't wait for them to come out, they were going to be the picture of perfection! Wrong. They were a mess of cake glued together on top of a muffin pan. The remains are scrapped out into a glad container we are scooping to eat. Yum....Ice cream style coffee cake. Sure why not. There's my story. Test kitchen fail. Not everyone can be perfect, and certainly not me. ........ Did I mention my milk was also expired?
